Stuffed Pork Tenderloin Food Network. It's hard to find better partners culinary pork and apples. One of the finest cuts of any kind of meat is pork. When cooked, it is tender, juicy, and less fat than you might think. This recipe for roast a couple of fillets of pork with apple stuffing. Any firm, tart apple works best for this recipe. Honeycrisp apple is my favorite eating out and for use in the kitchen, and it works great.
Take a couple of pork tenderloins (which often are sold in pairs, about 4 pounds per pair) apart and make a groove in each half of the back for filling. A little salt and pepper on the side of the slot. Set aside.
Filling
1 medium apple, peeled, cored and cut into cubes. Honeycrisp works well
4 slices bread, toasted and cubed
1 / 4 medium onion, diced
3 tablespoons brown sugar
1 tablespoon sherry
1 teaspoon salt
1 teaspoon pepper
Combine all ingredients in a bowl. Stuff each steak and then put them together with the filling to the sides. Tie with butcher twine.
